About Rutabaga

A dense brassica root (swede) that ferments slowly into a firm, mildly sweet pickle. Lower water content than turnip means it benefits from being cut small or grated and salted directly to draw brine. Holds its texture well over long ferments and keeps for months.

Technique

Peel and cut into 1cm cubes or coarse-grate. For cubes, brine at 2.5% (25g salt per liter); for grated, dry-salt at 2.5% of weight and massage until liquid pools, then pack below the brine. Ferment 10-21 days at 60-68°F. The slower, cooler ferment develops a rounder flavor.

25g fine sea salt or pickling salt per 1000g (1L) water. Dissolve fully before pouring. Not a long-term preservation brine — refrigerate within 7 days of starting ferment. Too dilute for room-temp storage past 2 weeks.

What a 2.5% brine does for Rutabaga

A 2.5% brine is 25 g of salt in every litre of water. That salt pulls moisture out of the rutabaga by osmosis and, more importantly, tilts the jar in favour of salt-tolerant Lactobacillusover the spoilage microbes that can't handle it. A stronger brine ferments more slowly, keeps the vegetable firmer and crunchier, and stores longer; a weaker one ferments faster and softer.

How much salt do I need for a 2.5% brine?

Dissolve 25 g of non-iodised salt (fine sea or pickling salt) in every 1 litre (1000 g) of water — that is 2.5% by weight. For a partial jar, scale it with the calculator above; the ratio stays the same.

How long does Rutabaga take in a 2.5% brine?

About 14 days at the 68°F baseline. It runs slower in a cool room (~26.9 days at 60°F) and faster when it's warm (~9.4 days at 75°F). Start tasting from day 7 and refrigerate once it's as sour as you like.

Is a 2.5% brine strong enough and safe?

Why keep the rutabaga under the brine?

Under the liquid the environment is oxygen-free, which is exactly what the Lactobacillus you want thrives in and what surface moulds and kahm yeast cannot tolerate. Anything poking above the brine is at risk — weigh the vegetables down so everything stays submerged.

Is cloudy brine or a white film normal?

Cloudy brine and a little sediment are normal signs of an active lacto-ferment. A thin, flat white film on the surface is usually kahm yeast — harmless; skim it off. Only fuzzy, raised, or blue/green/black growth is mould, in which case discard the batch.
