About Zucchini

A high-water summer squash that ferments fast but softens easily. Like cucumber, zucchini's ~95% water content makes it prone to going mushy, so it is brined at a higher salt percentage (3.5-5%) to keep the flesh firm and slow softening. Best fermented in spears or thick coins rather than shredded.

Technique

Cut into spears or 1cm coins. Submerge in a 3.5-5% salt brine (35-50g salt per liter of water) with a grape, oak, or horseradish leaf for tannins that preserve crunch; add garlic and dill if desired. Keep fully under the brine with a weight at 65-72°F for 5-10 days, then refrigerate once sour. Firmer at the lower end of the time range.

Kimchi salting is a 2-stage process: 3.5-4% dry salt → 2-4 hour rest (flip halfway) → 3x rinse → paste application. The salt drawn into the water during rest is what rinses away. Final kimchi effective salt is ~2%.
