Temperature / 6165°F / Rutabaga

Rutabaga at 6165°F: 21 days

0.67× the speed of the 14.0-day baseline at 68°F. Target pH 3.80 · default salt 2.50%.

Temperature & timing

Most published recipes assume a 68 °F kitchen. Enter the base days for your recipe and the temperature you actually have — we return the adjusted fermentation time.

21days
1.5× the base time at 63 °F (17.2 °C) · Cool room

Cool room. Classic sauerkraut / kimchi primary range. Predictable, safe, flavour-forward.

Safety at 6165°F

Cool ferment zone. Preferred range for long-aged sauerkraut (traditional Bavarian 6-8 week ferment). LAB dominance clearly established. Pathogen inhibition strong. Slight reduction in fermentation speed vs 68°F but flavor development is cleaner — less sharp, more complex.

At this range: Best for sauerkraut 3-6 week ferments targeting deep complex flavor. Good for full-sour pickle. Decent for kimchi primary (ferment longer at this temp, ~5-7 days).

About rutabaga

A dense brassica root (swede) that ferments slowly into a firm, mildly sweet pickle. Lower water content than turnip means it benefits from being cut small or grated and salted directly to draw brine. Holds its texture well over long ferments and keeps for months.

Technique

Peel and cut into 1cm cubes or coarse-grate. For cubes, brine at 2.5% (25g salt per liter); for grated, dry-salt at 2.5% of weight and massage until liquid pools, then pack below the brine. Ferment 10-21 days at 60-68°F. The slower, cooler ferment develops a rounder flavor.

Frequently asked questions

How long does rutabaga take to ferment at 61–65°F?

About 21 days at 61–65°F (16.11–18.33°C) — 0.67× the speed of the 14.0-day baseline at 68°F. Start tasting from day 5 regardless of temperature; target pH is 3.80 or below.

Is 61–65°F safe for fermenting rutabaga?

Cool ferment zone. Preferred range for long-aged sauerkraut (traditional Bavarian 6-8 week ferment). LAB dominance clearly established. Pathogen inhibition strong. Slight reduction in fermentation speed vs 68°F but flavor development is cleaner — less sharp, more complex.

What salt percentage for rutabaga at this temperature?

Salt percentage doesn't change with temperature — 2.50% by weight is still the default for rutabaga (workable range 2.00%–3.50%). Temperature changes speed, not the salt ratio.
