Temperature / 61–65°F / Zucchini
Zucchini at 61–65°F: 11 days
0.67× the speed of the 7.0-day baseline at 68°F. Target pH 3.60 · default salt 3.50%.
Temperature & timing
Most published recipes assume a 68 °F kitchen. Enter the base days for your recipe and the temperature you actually have — we return the adjusted fermentation time.
Safety at 61–65°F
Cool ferment zone. Preferred range for long-aged sauerkraut (traditional Bavarian 6-8 week ferment). LAB dominance clearly established. Pathogen inhibition strong. Slight reduction in fermentation speed vs 68°F but flavor development is cleaner — less sharp, more complex.
At this range: Best for sauerkraut 3-6 week ferments targeting deep complex flavor. Good for full-sour pickle. Decent for kimchi primary (ferment longer at this temp, ~5-7 days).
About zucchini
A high-water summer squash that ferments fast but softens easily. Like cucumber, zucchini's ~95% water content makes it prone to going mushy, so it is brined at a higher salt percentage (3.5-5%) to keep the flesh firm and slow softening. Best fermented in spears or thick coins rather than shredded.
Technique
Cut into spears or 1cm coins. Submerge in a 3.5-5% salt brine (35-50g salt per liter of water) with a grape, oak, or horseradish leaf for tannins that preserve crunch; add garlic and dill if desired. Keep fully under the brine with a weight at 65-72°F for 5-10 days, then refrigerate once sour. Firmer at the lower end of the time range.

Frequently asked questions
How long does zucchini take to ferment at 61–65°F?
About 11 days at 61–65°F (16.11–18.33°C) — 0.67× the speed of the 7.0-day baseline at 68°F. Start tasting from day 5 regardless of temperature; target pH is 3.60 or below.
Is 61–65°F safe for fermenting zucchini?
Cool ferment zone. Preferred range for long-aged sauerkraut (traditional Bavarian 6-8 week ferment). LAB dominance clearly established. Pathogen inhibition strong. Slight reduction in fermentation speed vs 68°F but flavor development is cleaner — less sharp, more complex.
What salt percentage for zucchini at this temperature?
Salt percentage doesn't change with temperature — 3.50% by weight is still the default for zucchini (workable range 3.00%–5.00%). Temperature changes speed, not the salt ratio.
