Safety at 6670°F

Standard temperate ferment zone. Ideal for most kitchens. LAB dominance immediate. Pathogen risk minimal. NCHFP-recommended baseline for home ferments. Slightly below 68°F reference gives a modest speed reduction.

At this range: Default recommendation. Works for every lacto-ferment style. First-time fermenters should aim for this range. Visible bubbling activity starts day 2-3 and is obviously vigorous.

About parsnip

A sweet, starchy winter root whose high sugar content fuels a vigorous, slightly effervescent ferment. The sweetness mellows into a complex, gently tangy pickle. Lower water content (~80%) means a brine-pickle works better than dry-salting.

Technique

Peel and cut into batons or 1cm coins. Cover with a 3% salt brine (30g salt per liter) plus optional bay, peppercorn, or ginger. Because parsnip is sugary, watch for active bubbling and burp the jar; ferment 10-18 days at 62-70°F, then refrigerate. Pairs well in a mixed root ferment with carrot and turnip.

Frequently asked questions

How long does parsnip take to ferment at 66–70°F?

About 14 days at 66–70°F (18.89–21.11°C) — 1× the speed of the 14.0-day baseline at 68°F. Start tasting from day 5 regardless of temperature; target pH is 3.80 or below.

Is 66–70°F safe for fermenting parsnip?

Standard temperate ferment zone. Ideal for most kitchens. LAB dominance immediate. Pathogen risk minimal. NCHFP-recommended baseline for home ferments. Slightly below 68°F reference gives a modest speed reduction.

What salt percentage for parsnip at this temperature?

Salt percentage doesn't change with temperature — 3.00% by weight is still the default for parsnip (workable range 2.50%–3.50%). Temperature changes speed, not the salt ratio.
