2.9days
0.42× the base time at 83 °F (28.3 °C) · Mould risk

Above 82°F: kahm yeast and mould rise fast. Relocate the crock, or accept it as a ‘quick pickle’ and refrigerate once tangy.

Safety at 8185°F

Very hot. UPPER LIMIT for home lacto-fermentation — approach with caution. LAB activity extreme but competing organisms (film yeasts, molds, heterofermentative lactobacilli producing off-flavors) thrive too. Vegetable texture collapses quickly. Not recommended for sauerkraut or brine-pickles.

At this range: Acceptable only for: miso primary (warm region of its range), tempeh inoculation (Rhizopus needs warm), kombucha short batches. For vegetable ferments, find cooler spot. Check daily.

About mixed hot peppers

Habanero, Fresno, Serrano, Cayenne blends. Higher-heat peppers (habanero 100k-350k SHU) work identically to jalapeño for fermentation — capsaicin does not inhibit Lactobacillus. Mixed blends produce more complex final flavor.

Technique

Same as jalapeño. Mix ratios to taste: 60% mild (jalapeño/fresno) + 30% medium (serrano) + 10% hot (habanero) is a balanced starting point. For Tabasco-style: 100% tabasco peppers, aged 30-60 days.

Frequently asked questions

How long does mixed hot peppers take to ferment at 81–85°F?

About 2.9 days at 81–85°F (27.22–29.44°C) — 2.38× the speed of the 7.0-day baseline at 68°F. Start tasting from day 5 regardless of temperature; target pH is 3.50 or below.

Is 81–85°F safe for fermenting mixed hot peppers?

What salt percentage for mixed hot peppers at this temperature?

Salt percentage doesn't change with temperature — 2.50% by weight is still the default for mixed hot peppers (workable range 2.00%–3.50%). Temperature changes speed, not the salt ratio.
