Technique at 2.5%
25g fine sea salt or pickling salt per 1000g (1L) water. Dissolve fully before pouring. Not a long-term preservation brine — refrigerate within 7 days of starting ferment. Too dilute for room-temp storage past 2 weeks.

2.5% brine = 25g salt per litre of water. For 2 litres: 50g salt. For 500ml: 12.5g salt. Multiply water volume in grams by 0.025 to calculate. Use non-iodised salt.
