Temperature / 55–60°F / Napa Cabbage
Napa Cabbage at 55–60°F: 11 days
0.45× the speed of the 5.0-day baseline at 68°F. Target pH 4.00 · default salt 4.00%.
Temperature & timing

Safety at 55–60°F
Slow ferment zone. LAB activity is reduced but still dominant. Pathogen risk remains low because Lactobacillus still outcompetes at this range. Traditional Eastern European sour pickle fermentation (ogórki kiszone) happens here — root cellar / basement winter temps. Expect ferment to take 2-3× longer than 68°F baseline.
At this range: Best for long-ferment full-sour pickles (2-3 weeks). Good for long-ferment sauerkraut (4-6 weeks) for deeper flavor. Not ideal for first-time fermenters because visible activity is slow; trust the process.
About napa cabbage
The standard kimchi base. Napa cabbage has looser, more water-dense leaves than green cabbage. Traditional Korean preparation salts at higher % (3.5-5%) during a pre-ferment brining stage to draw water and soften leaves before the paste is added.
Technique
Quarter cabbage lengthwise. Dry-salt at 4% by quarter weight, rest 2-4 hours flipping halfway. Rinse 3x in cold water to remove excess salt. Toss with kimchi paste (gochugaru, ginger, garlic, fish sauce or alternative, carrot, scallion, radish). Pack into jar leaving 2cm headspace. Ferment 3-7 days at 65-70°F then transfer to fridge.

Frequently asked questions
How long does napa cabbage take to ferment at 55–60°F?
About 11 days at 55–60°F (12.78–15.56°C) — 0.45× the speed of the 5.0-day baseline at 68°F. Start tasting from day 5 regardless of temperature; target pH is 4.00 or below.
Is 55–60°F safe for fermenting napa cabbage?
Slow ferment zone. LAB activity is reduced but still dominant. Pathogen risk remains low because Lactobacillus still outcompetes at this range. Traditional Eastern European sour pickle fermentation (ogórki kiszone) happens here — root cellar / basement winter temps. Expect ferment to take 2-3× longer than 68°F baseline.
What salt percentage for napa cabbage at this temperature?
Salt percentage doesn't change with temperature — 4.00% by weight is still the default for napa cabbage (workable range 3.50%–5.00%). Temperature changes speed, not the salt ratio.
