Temperature / 81–85°F / Napa Cabbage
Napa Cabbage at 81–85°F: 2.1 days
2.38× the speed of the 5.0-day baseline at 68°F. Target pH 4.00 · default salt 4.00%.
Temperature & timing
Most published recipes assume a 68 °F kitchen. Enter the base days for your recipe and the temperature you actually have — we return the adjusted fermentation time.
Safety at 81–85°F
Very hot. UPPER LIMIT for home lacto-fermentation — approach with caution. LAB activity extreme but competing organisms (film yeasts, molds, heterofermentative lactobacilli producing off-flavors) thrive too. Vegetable texture collapses quickly. Not recommended for sauerkraut or brine-pickles.
At this range: Acceptable only for: miso primary (warm region of its range), tempeh inoculation (Rhizopus needs warm), kombucha short batches. For vegetable ferments, find cooler spot. Check daily.
About napa cabbage
The standard kimchi base. Napa cabbage has looser, more water-dense leaves than green cabbage. Traditional Korean preparation salts at higher % (3.5-5%) during a pre-ferment brining stage to draw water and soften leaves before the paste is added.
Technique
Quarter cabbage lengthwise. Dry-salt at 4% by quarter weight, rest 2-4 hours flipping halfway. Rinse 3x in cold water to remove excess salt. Toss with kimchi paste (gochugaru, ginger, garlic, fish sauce or alternative, carrot, scallion, radish). Pack into jar leaving 2cm headspace. Ferment 3-7 days at 65-70°F then transfer to fridge.

Frequently asked questions
How long does napa cabbage take to ferment at 81–85°F?
About 2.1 days at 81–85°F (27.22–29.44°C) — 2.38× the speed of the 5.0-day baseline at 68°F. Start tasting from day 5 regardless of temperature; target pH is 4.00 or below.
Is 81–85°F safe for fermenting napa cabbage?
What salt percentage for napa cabbage at this temperature?
Salt percentage doesn't change with temperature — 4.00% by weight is still the default for napa cabbage (workable range 3.50%–5.00%). Temperature changes speed, not the salt ratio.
